Ajoblanco – White Gazpacho

Puree of garlic, almonds, bread, olive oil, sherry, white wine vinegar, salt, white pepper. Shrimp and cockles. Piquillo pepper puree. Olive oil. Limo chilies.

Puré de ajo, almendras, pan, aceite de oliva, jeréz, vinagre de vino blanco, sal, pimienta blanca. Camarones y bererechos. Puré de pimientos piquillos. Aceite de oliva. Aji limo.

Shiso Cheesecake – Cheesecake de Perilla

Vanilla cookie crust. Filling of homemade cream cheese, sugar, eggs, lemon juice, shiso leaves. Passionfruit and mango sauce. Cherries in amaretto syrup. Toasted shiso seeds. Julienne of shiso leaves.

Masa de galletitas de vainilla. Relleno de queso crema casero, azucar, huevos, jugo de limón, hojas de perilla. Salsa de maracuyá y mango. Cerezas en jarabe de amaretto. Semillas de perilla tostadas. Hojas de perilla en juliana.
