Eggplant & Zucchini Tonnato – broiled rounds of spiced eggplant and zucchini; sauce of mayonnaise, tuna, anchovy, capers, gochujang; salted cucumber and radish slices; chopped hard boiled egg, chives.

Berenjena y Zapallito Tonnato – rodajas de berenjena y zapallito largo, especiado y asado; salsa de mayonesa, atún, anchoa, alcaparra, gochujang; rodajas de pepino y rabanito salados; picada de huevo duro, ciboulette.

Brussels Sprout Bisque – pureed soup of brussels sprouts, potato, onion, garlic, smoked chili, white wine, vegetable broth, cream; smoked chili oil, salted yogurt, blanched brussels sprout leaves.

Bisque de Repollitos – sopa en puré de repollitos, papa, cebolla, ajo, ají ahumado, vino blanco, caldo de verduras, crema; aceite de ají ahumado, yogúr salado, hojas de repollitos blanqueados.

Homemade Spaghetti, Lamb Ragout – homemade semolina spagetti; ragout of lamb, onion, garlic, pepperoncino, tomato, rosemary, truffle oil; chopped rosemary, sheep’s milk pecorino cheese.

Espaguettis Caseros, Ragú de Cordero – espaguettis de semolín caseros; ragú de cordero, cebolla, ajo, pepperoncino, tomate, romero, aceite de trufa; romero picada, queso pecorino de oveja.

Milk-Braised Flank Steak, Grains, Mushroom Cream Sauce – flank steak braised in milk, miso, espresso, cumin, chipotle, black pepper, salt for 6 hours; barley cooked in dark beer, wild rice cooked in mushroom stock; sauce of mushrooms, red onion, garlic, gochugaru, cream; caramelized fennel; salsa verde of watercress, garlic, hard boiled egg, white wine vinegar, olive oil, anchovy.

Vacio Braseado en Leche, Cereales, Crema de Champiñones – vacío braseado en leche, miso, espresso, cómino, chipotle, pimienta negra, sal durante 6 horas; cebada cocido en cerveza negra, arroz salvaje cocido en caldo de hongos; salsa de champiñones, cebolla morada, ajo, gochugaru, crema; hinojo acaramelizado; salsa verde berro, ajo, huevo duro, vinagre de vino blanco, aceite de oliva, anchoa.

Chocolate Orange Cheesecake, Raspberry Syrup – cocoa crust; filling of homemade cream cheese, dark chocolate, orange juice, sugar; caramelized orange zest; strained puree of raspberries cooked in sugar syrup.

Cheesecake de Chocolate y Naranja, Jarabe de Frambuesa – masa de cacao; relleno de queso crema casero, chocolate amargo, jugo de naranja; cascara de naranja acaramelizada; puré colado de frambuesas cocidas en jarabe de azucar.
