Whenever I order a sandwich in Chile, though, I ask them to hold the mayo – they’re often incredulous that I don’t like mayo, especially in Chilean quantities, but they usually comply with my wishes.

Wayne, I went into it knowing that there would be a lot of mayo – Bourdain commented the same on his show. But this just really seemed excessive. Besides… it’s that “page 643″… the Moon Guide is great in terms of info, but ya have to admit, it’s a bit bulky – it actually weighs more than my laptop – so I tended to look stuff up in the hotel and not carry it with me!

Frances, good to know that’s not the best there is in terms of lomitos, I couldn’t imagine that it was. I’ll get to it in another post, but I loved the chacarero – one of my new sandwich faves.

Santiaguinos are masters of the sandwich and some places bake their own bread, big as a side plate, and pile it high. You have to be Chilean born not to get mayonnaise on your nose. I always ask for half the mayo, please.
I am sorry you have found you are being rushed out the door at restaurants. I find you usually have to beg for the bill. But service in Santiago is a weak spot (in restaurants or Casa Royal!).
