Two of them (Fukuro and Nueva Casa Japonesa), upfront, I’ve been to many times and standby the reviews. I hadn’t, however, been back to 430, and she asserted that it was much better now that they make their own noodles. Well, first off, they made their own noodles back then, my issue wasn’t that, it was how they were cooked. But, I’d gone when it had barely been open a couple of weeks, and I’d promised to back and check it out.

Started off with an order of gyoza this time. Right off the bat doesn’t bode well – you can see that they’re undercooked – there’s still raw sections on the surfaces of the pleats, and the bottom is barely golden. The flavor is good, but not the dough.

As best I can tell, the ramen hasn’t changed in presentation (on a non-presentation note, they now have a beef version too), though I’d note that the egg was way over cooked – you can see the grey ring around the yolk from being hard boiled far too long. I dug in with the chopsticks, and…

…the noodles came up in two big clumps, matted together, and once again, way over cooked and gummy. The broth is still great, but they just don’t seem to know how to cook noodles (and since the gyoza has the opposite problem, under cooking, they need to work on this). Sorry, but I stand by my original review. Oh, and the price is now 145 pesos and no longer includes a beverage, which makes it a roughly 40% increase in price over last year.
