I used to track it in detail, but it so quickly fell into a pattern that it didn’t require tracking, as anyone outside the pattern stood out as a completely outlier. Well over 90% of all the dietary requests and other weird email requests we receive and such come from exactly four cities: New York, Los Angeles, San Francisco, and London, and relatively equally distributed between them. That includes really everything except a few severe allergies like shellfish or nuts/peanuts, vegetarians, and folk who don’t eat pork or beef for religious reasons.

I had never heard of it!! In fact I have spent the whole week cooking chinese food due to a sudden craving for it and the fact that I have run out of patience with sous-vide baby food and fallen in love with turning my burners up and cooking in a super hot wok or three. Most delicious recent discovery (at least new to me) is spicy stir fried cucumber, which after de-seeding and salting comes out amazingly crisp and strangely strong tasting. Anyway, Happy New Year to you and Henry! I had a good laugh reading your clients’ requests blog! I think you should identify them by nationality though. You might find there is a pattern….and if they have recently been on a cruiseship???? Jajaja!

Tried a smoked tofu and mango summer roll, wrapped, instead of in rice paper, in “tofu skins” – delicious! Chicken yakitori skewers, quite good, though maybe just a little too sweet for our tastes. Less successful, a new tapa that they were trying out, an “ebi toast” – a mix of shrimp and pork “paste” on a fried slice of bread – the bread, a plain white bread, overly crunchy from being fried and just soaked with oil, and too little of the shrimp-pork mixture on top, the flavor was lost. And tried one of the main courses, a grilled sole with vegetables, which was a bit overcooked and sort of ho-hum in flavor. But overall, far more hits than misses!
