I went some years ago with several regulars, which I think enhances the experience. The service, as you suggested, was exemplary and good-humored.

The interesting thing is that it’s not. Every guidebook out there recommends it I think, and with fairly positive things to say. I imagine, however, that most visitors who find themselves over in that area take a look at it and decide to go elsewhere, especially with the “lure” of Puerto Madero across the avenue. It also does have the look at first glance of a place that you might want to be a bit dressier to go into, and many folk out wandering around tend to be very casually dressed.

Sabot has always been a favourite of mine. I thought it was because I am a bit moth-eaten myself but am glad to hear you liked it! Buenos Aires used to have more similar places. Long may it stay below the restaurant guide radar.
