		<description>It is - primarily because he does make the point, more than once, that these are guidelines and not rules. Had he presented the book as &quot;this is how to do it and it&#039;ll never fail&quot;, I&#039;d have failed the book. And the concept is good, I use ratios all the time, as do many chefs - I picked them up in cooking school - but we also learned how to adjust for different factors, and more importantly, how to rely on our own judgment.

That&#039;s why I think the book is gold for professionals, and have some cautions for folks who aren&#039;t, especially those who follow recipes to the &quot;t&quot;.</description>
