This is just one of those geeky things I run across on my meanderings along the “internets superhighway” as someone once termed it. The video is actually about four years old, though has only been up online about a year now, and presents the development of a theory of how we smell things. It comes from the biophysicist quoted above, who now works in the world of perfumery, but applies to food and wine just as readily. It’s 16 minutes well spent.
