Well, it could easily, but in tasting menu style, we're keeping the portions small, there's no real main course - just a series of four appetizer sized (okay, I come from a proper Jewish family, which, like an Italian family, doesn't believe in the concept of "there's too much to eat") portions followed by dessert. This particular dinner was a bit carb-loaded - spaetzle, empanadas (with corn inside), risotto, pasta, and then a cheesecake on top of all that - usually they're not quite that uni-directional. All I know is that almost everyone finished everything and no more than three or four of them went out and ran marathons afterwards...

I like that you are finding ways to incorporate local foods into Italian cuisine. It's the same thing we have to do here in Italy to eat ethnic foods. What I am stunned by is the idea of pasta and risotto being served in the same meal, with one taking the place of a piatto secondo! Does it not induce a carb coma?
